Definitely one of the most interesting wines we’ve tasted all year! This is Riesling meets fino sherry, really oxidative, heaps of flavour and mouth watering acidity. The wine is left on skins for 8 months before being put into a ceramic egg to develop a flor yeast then to barrel for 9 more months. The result is a salty, nutty, peaty wine with loads of ginger spice, orange skins and dried apricots. A wine that definitely takes a walk on the wild side!
